4 servings · 15 min prep · 25 min cook · in video 5:22

Ingredients

  • 6-7 eggs
  • Store-bought phyllo dough sheets for gibanica
  • Cheese (about 11–14 oz (300-400 g))
  • 2 large tablespoons kajmak (clotted cream)
  • Sparkling mineral water
  • Oil
  • A little milk
  • Sesame seeds (optional for sprinkling)

Steps

  1. Grease a pot or small baking dish well with oil.
  2. In a deep bowl, crack 6 to 7 eggs, lightly salt them, and whisk with a wire whisk.
  3. Add the cheese to the beaten eggs and combine the mixture.
  4. Add two large tablespoons of kajmak and a little milk, then mix well to combine.
  5. Place two phyllo sheets at the bottom of the greased pot to cover the base, and sprinkle them with sparkling water and oil.
  6. Crumble the remaining phyllo sheets individually, dip them into the prepared egg, cheese, and kajmak mixture, and arrange them side by side in the pot.
  7. Pour any remaining filling over the assembled sheets and fold the hanging edges of the phyllo over the top.
  8. Sprinkle the top with a little more sparkling water, oil, and sesame seeds.
  9. Place in a preheated oven and bake for about 20 to 25 minutes until nicely golden brown.
  10. Remove from the oven, let cool slightly, cut into squares, and serve.
