Tomato Soup with Turkey
Ingredients
- 14 oz (400 g) turkey
- 1 onion
- 2 carrots
- a little celery
- parsley root
- oyster mushrooms
- tomato juice
- water
- pepper
- spice mix / chicken seasoning
- oil
Steps
- Prepare and wash all the vegetables, then finely chop the onion, carrots, celery, parsley, and oyster mushrooms.
- Cut the turkey meat into small cubes.
- In a pot with a little oil, sauté the chopped onion, celery, and carrots, stirring occasionally until the vegetables soften a bit.
- Add the chopped oyster mushrooms and parsley to the pot and simmer everything together for another 5-6 minutes.
- Season the vegetables and mushrooms with a little pepper and spice mix to taste.
- Add the chopped turkey to the pot to fry together with the vegetables until the meat changes color.
- Pour in water and add tomato juice depending on the desired thickness of the soup.
- Reduce the heat and let the soup simmer for about half an hour until all ingredients are completely tender and flavors are combined.
- Remove the soup from the heat, let it cool slightly, and serve warm.
