Cabbage with Wide Noodles

Ingredients

  • 1 package wide noodles (Danubius)
  • 1 head of young cabbage
  • 5 small yellow onions
  • 2 carrots
  • Homemade clarified butter (or oil)
  • Salt and pepper to taste
  • Vegetable seasoning powder (such as Vegeta)
  • A little fresh parsley

Steps

  1. Prepare all ingredients: clean and finely chop the onions and carrots.
  2. Cut the young cabbage into strips or larger pieces.
  3. Bring a pot of water to a boil, salt it, and add the wide noodles to cook.
  4. Heat a little oil and homemade clarified butter in a pot or deep skillet.
  5. Add the chopped onions and carrots, and sauté over medium heat until the onions become translucent.
  6. Add the chopped young cabbage to the skillet with the onions and carrots.
  7. Season with salt, pepper, vegetable seasoning, and chopped parsley to taste.
  8. Simmer and fry everything together, stirring occasionally, until the cabbage softens slightly while still retaining a crunch.
  9. Once the noodles are cooked, drain them.
  10. Combine the cooked wide noodles with the sautéed cabbage and vegetables.
  11. Mix well to blend all the flavors and remove from heat.
  12. Serve warm.
